Cranberry Orange Cake

Ingredients:

2 cups flour
3/4 cup sugar
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup orange juice
1/3 cup vegetable oil
1 tablespoon orange zest
1 teaspoon Vanilla
1/2 teaspoon Ginger
2 clementine oranges, separated
1/2 cup dried cranberries

Directions:

1. Preheat oven 350 degrees F.

2. In round cake pan, mix together dry ingredients (flour, sugar, baking powder, baking soda, and salt). Make a well in the center.

3. Add orange juice, vegetable oil, orange zest, vanilla, and ginger.

4. Add clementine pieces and cranberries; mix until just thoroughly mixed.

5. Bake for 40 to 45 minutes.
